Hugh Malone Ale

Hugh Malone Ale’s base includes English two-row malt and pale crystal malts, establishing an understated sweetness. To give Hugh Malone its hop character we use generous portions of Simcoe hops at three points in the brewing process. To begin with, we use a technique referred to as first wort hopping, in which Simcoe is added to the sweet wort as it enters the kettle. When the wort comes to a boil in the kettle we add Warrior hops, adding another layer to the bitterness of the beer. Later in the brewing process we steep a large amount of Simcoe in the whirlpool to impart a distinct hop aroma. Finally, during secondary fermentation in our conditioning tanks, we dry hop the beer, which instills a hoppy aroma with notes of pine and grapefruit. This 8.5 % ABV ale has a malty palate and a pronounced bitterness. It has a pleasant dry, hoppy finish. Hugh Malone is a tribute to responsible agricultural practices and informed consumption. Allagash Brewing Company is donating $1 from every bottle of Hugh Malone sold to the Maine Organic Farmers and Gardeners Association (MOFGA), the country’s oldest and largest state organic farmer coalition. MOFGA is a non-profit organization that educates farmers and gardeners about organic cultivation. They work to create resources for consumers interested in buying local and organic foods. Hugo is named for my wife Jan's grandfather, Hugo Effenberger, who moved to Tillamook County from Germany in 1883. Hugo displays strong malt character, with earth, toast, anise and chocolate notes, and a slightly bitter/sweet finish. I expect this year's version to be a bit bigger than last year's. This lager can complement any number of dishes, from salads to cheese to chicken. We expect to release 2012 Hugo in late February/early March.

Huguenot Colonial Sour Saison

This tart Saison was brewed with heirloom variety rustic grains from Anson Mills, a company who is known for preserving heirloom varieties and providing access to some of the most flavorful cereals for chefs. We chose to brew with Huguenot Black Oats, Black Rye, and Carolina Gold Rice Middlins for an added twist. The heirloom grains provided a nice rustic, tart backbone for our Brettanomyces mixed culture fermentation and extended aging.

A cross between two of our most popular beers Hula and In the Pines, this playful Pale Ale lends the warm tropical fruits of Mosaic and Summer hops to rich malts, giving a full flavour that ends with the crisp citrus and fresh pine of Citra and Simcoe. Bold, bright and complex. 500 ML BOTTLES ・ BOTTLED ON: 12/05/13 ・ BEST BEFORE: 11/11/13 ・ BATCH: 1 ORIGINAL GRAVITY: 1054 ・ FINAL GRAVITY: 1014 ・ IBU: 40 The malt bill is simply a blend of the ingredients used in Hula and In the Pines - a cross between a pale ale and an amber ale. It’s mostly Maris Otter Pale malt with a healthy dose of Munich. Then we added some Melanoiden and CaraGold for body and sweetness, along with a touch of Torrified Wheat to give at that nice lacey head. Our Malt comes from Warminster Maltings, a traditional Victorian floor malt house just down the road in Wiltshire. They produce the finest malts available and are a thoroughly nice bunch. There are quite a few hops in here, so plenty going on. During the boil we added a lot of Citra, famous for it’s potent, resinous tropical citrus flavours. We balanced that with Summer, a more gentle hop known for warm fruit flavours like melon and apricots, and Mosaic, a famously complex and intensely fruity hop. We then dry hopped with more Citra and Simcoe - a delightfully piney and plummy hop that has been a firm favourite at Wiper and True for years. Seems like we are not alone as it is getting more and more difficult to get hold of....

This beer is made almost entirely from a traditional British Pale malt called Maris Otter, regarded around the world as one of the best beer making malts ever produced, with a little bit of CaraGold for sweetness and body, and some Torrified Wheat for keeping that nice white head all fluffy. Our Malt comes from Warminster Maltings, a traditional Victorian floor malt house just down the road in Wiltshire. They produce the finest malts available and are a thoroughly nice bunch. This beer is packed full of Citra hops. Citra is a wonderfully potent, resinous and ballsy hop. It’s loaded with citrus notes and anything else your tastebuds may care to pick up, from guava to stone fruit. The hop has only been around since 2009 but has exploded onto the craft beer scene and has become a firm favourite for hop heads. The Citra is balanced with the more subtle, but wonderfully warm Summer hop from Australia, adding flavours like melon and apricot to round off the crazy citrus.
