Our first holiday ale is a Dark Chocolate Coffee Milk Stout. It uses Maris Otter as the base malt in combination with English hops and Extra Dark Cocoa. Post-fermentation, fresh cold pressed coffee from our local coffee roaster, Righteous Bros, was added and the brew was aged a bit. This beer is named after Santa's hit man. Pronounce it like this: Knecht Ruprecht.

Imperial RyePA is not an officially sanctioned beer style, so we got a kick out of tweaking this one. We started with a simple malt bill, with 25% rye for a little spice and a crisp finish. Simcoe highlights the hop profile, adding a nice earthy bitterness that really shines against the malt backdrop. Imperials are meant to be bigger beers, and Knob Hill follows suit with a 9% ABV, 70 IBUs, and plenty of tasty character.

Know-Nothing Hefeweizen

This is great staple beer to have in our assortment. A light, full-bodied ale with good citrus notes, and good wheat flavor, this one is truly for everyone! Hefeweizen usually runs 5.3% ABV. This beer is inspired by the German stylings of the Dewes Brewery on early Chicago's West Side. Dewes was know most for its "Munich Beer" and we were inspired to do a German-style reminiscent of that beer. The name is inspired by the political party in the 1800s in Chicago that attempted to smother German taverns by increasing liquor taxes and banning the sale of alcohol on Sundays. The Know-Nothing party inadvertently started what became known as the Chicago Lager Beer Riots.
