Tasting Notes This nearly opaque black beer offers up aromas of citrusy, piney hops with malt intonations, toast and restrained mocha. The overall flavour balance favours the impression of juicy, resinous hops supported by a solid malt backbone. This strong ale is robust, but the alcohol remains well integrated.

Le Poisson Rouge

The Red Fish is another offering from the wood barrel in the brewery. Le Saisonniere

Saisons (pronounced “say-zohns”) are refreshingly crisp, dry beers traditionally brewed in the French-speaking southern part of Belgium known as Wallonia. Originally brewed for summertime consumption, they are now year-round standards at the family table. Le Saisonniere was brewed in the style of a grisette and named in honor of the saisonnieres, seasonal farm workers who toiled in the summer sun and were rewarded with and refreshed by this thirst-quenching beer. These were historically brewed to a lower alcohol content despite the recent industry precedent to create much stronger saisons.

Le Terroir

Le Terroir is a french term meaning “of the earth”. Used to reference the environmental conditions that affect the brew, we like to think about the terroir of our foeders. These wooden barrels age our sour beer in varying temperatures, humidity, and vibrations. The terroir of New Belgium, so to speak. Add in another variable by dry-hopping with peachy, mango-like Amarillo hops, and we created a beer that changes every time we brew it.
