Prime Meridian India Pale Ale

This deep golden-colored beer is topped by a dense rocky crown that kicks off a punchy American IPA hop aroma. The unique tropical fruit nose of Meridian hops follows through in the taste. For balance, a Flemish saison-inspired malt bill; well-attenuated yet maintaining a full body. We ferment it at high temps to make the most of our house yeast strain, creating a late fruity tartness that plays out nicely with the lingering hop character.

Prime Minister

This month’s event will feature the release of a new beer, Prime Minister, an English strong ale. Not many examples of the style are available, especially locally, which is why we chose to brew it. Consistent with our basic brewing philosophy, the mission for the Prime Minister is to provide north Texas with an exceptional example of the style, which may not be too familiar. Prime Minister appears dark orange with complex fruity esters contributing to the aroma. Its medium bodied with a malty/caramelly sweetness. Hop flavor is present and bitterness is light, but evident and balanced with the malt flavors present. Fruity-ester flavors add to the character of this rich, somewhat sweet and complex beer. As with many of our beers, this one’s name comes with history. Naming a beer isn’t easy. Iron Lady seemed the perfect fit for an English strong due to the Margaret Thatcher reference. However, our friends in Fort Worth, Martin House and Rahr, brew Iron Joe/Thistle and Salty Lady, and Iron Lady seemed too close for comfort. We settled on The Governor earlier in the year, but as the release date grew closer, we continued to conjure up hundreds of potential names. The brewers dubbed it Large Marge (a nod to Margaret Thatcher, the Margaret Hunt Hill Bridge, and PW’s Big Adventure), but the strong Prime Minister ultimately won out. The beer has one last super secret alias, but you’ll have to ask Grayson about that one. We released Prime Minister at our brewery on September 22, 2016. Proper Baking Co. joined us and served up traditional English fare. We also handed out glassware to commemorate the event.

Our new winter seasonal, Primus (pronounced, "pre moose"), is a dark, rich German-style Weizen beer (beer made with wheat malt) fermented with a very particular strain of brewers' yeast that gives this beer it's unique spicy and fruity character. The unfiltered beer has the characteristic clove and banana flavors familiar to HefeWeizen drinkers but with a darker and richer roasty malt character that is typical of some German-style Bock beers. The alcohol strength will be around 8%.

Prince Igor Imperial Russian Stout

Prince Igor [prins egor]: Named after the electrical contractor foreman on our building project, Igor Bushmakin. This Russian imperial stout is black as night with a dark tan head and aromas of coffee, roast, unsweet bakers chocolate, and alcohol. The alcohol in this beer is well hidden by the huge roasted malt character, bakers chocolate, slight malt sweetness and velvety smoothness. Surprisingly this beer finishes somewhat dry for as high in alcohol as it is. Be careful this will quickly sneak up on you. This style was brewed and made popular in the 18th century by Thrale’s brewery in London for export to the court of Empress Catherine II of Russia. The beer was higher in alcohol and contained more hops which made it suitable for the long export voyage. The higher alcohol content was also well suited for the colder harsher temperatures of Russia where spirits were typically the drink of choice. This is a great beer with dessert. The roast and alcohol will go great with sweets, especially chocolate.

Prince of Darkness

A low-gravity, low-bodied, low-conditioned ale. It’s color is dark brown. Maltiness, not roastiness, is evident. Hop character is not evident in aroma or flavor, but serves to balance the maltiness. A low, creamy, long-lasting head is usual. It is dry exhibiting licorice, fruity, very malty, or even chocolate characters. We use English Mild, Belgian Chocolate & German Caramel Malts and it is hopped with American Simcoe.

Princess 12

Classic Czech lager type, cooked according to the original recipe by brewer John Mikš from the 30s of the last century, which was distributed to stores in 1961 under the name 12st. Rychnovský lager. The beer has a pronounced bitterness, fuller taste and crisp bite. Production based on the best brewing ingredients and proven strain of brewer's yeast. Longer periods of lying and maturation in lager tanks, added beverages harmonizing the necessary ingredients. The alcohol content is higher than about 5.2%.

This Bohemian Pilsner pays tribute to our ancestor Priscilla Mullins. She was one of the few women on board the Mayflower who survived the journey and the harsh first winter. She was later immortalized as the unrequited love of Miles Standish and eventual wife of John Alden in the 1858 poem ‘The Courtship of Miles Standish’ by Henry Wadsworth Longfellow. “Priscilla is brewed in the traditional Bohemian Pilsner Style. It is a light and crisp lager, brewed entirely with floor malted Bohemian pilsner, a light and bready malt,” says Ryan Gwozdz, Head Brewer. “The wort was generously hopped entirely with Saaz, contributing a crisp bitterness and a spicy slightly floral aroma.
