Inspired by the sessionable German Berliner Weisse, we followed tradition and allowed the wort to mature overnight with lactobacillus. The next day it was boiled and transferred to the fermentor where we added a Belgian wheat yeast strain famous for fruity flavors and a dry finish. The result is a highly carbonated and refreshingly tart summer beer with a citrusy pineapple aroma. These aromas carry through in to the flavor leading to a dry but tart finish. This unfiltered ale is best consumed fresh- it will not continue to sour with age and is not recommended for cellaring.

Prunus (from the cherry's bothanical name, Prunus Avium or Cerasus according to variety) is made adding to our spelt beer Duchessa about 20% of fresh cherries with their stones. Tasting notes: Aroma is of malt with traditional hops in the background. Flavor starts with a slightly toasty malt sweetness, followed by a mild fruitiness from the yeast (strawberry) then a firm, but not overwhelming or harsh hop flavor. The hop character of this beer is due primarily to early hopping giving it a full hop flavor without a strong hop aroma. The finish of this beer is slightly sweet, but leaves the palate clean. This session beer is full-flavored without being high alcohol or dominated by hops. The intent was to let all the ingredients of the beer come through in the flavor and produce a complex brew that is still easy to drink.
