Shapeshifting Pale Ale Centennial, Equinox, Enigma

Protocosmos combines the crazy, fruity awesomeness of Australian Galaxy hops with the bright, citrusy qualities of American Ahtanum & Centennial hops. The dry, cracker-like malt body is super-saturated with hop flavor & aroma, allowing you to revel in the diggity dankness of these absurdly expensive hops without any sweetness to harsh your mellow. Protocosmos is named after an insane underground world described by Casanova (yup, that one) featuring multi-colored humanoids, strangely small flying horses, and fruit-eating serpents.

Our second batch of Provenance takes the vibrant flavors and aromas of lemons and limes and presents them in the unique way that only wild fermentation with native yeast and bacteria can. Unfiltered, unpasteurized, and 100% bottle-conditioned.

This is a dry, spicy thirst quenching brew. Not many locally produced Saisons on the Central Coast, so come and get yours!

Delicious pale ale, amber in color with a hoppy nose and touch of bitterness. It's brewed with Marris Otter barley malt and dark crystal malt. Hopping is a little wacky - we use Bullion, Target, Cascade, Perle, and Liberty hops.

This beer starts with a huge roasty aroma and a deep malty character. The flavor is smooth and elegant from the use of oatmeal while still having a bold finish with plenty of lasting roasty toasty!

Prunus (from the cherry's bothanical name, Prunus Avium or Cerasus according to variety) is made adding to our spelt beer Duchessa about 20% of fresh cherries with their stones. Differently from the typical Belgian kriek, it is not too sour as it keeps some of the Duchessa's smoothness. Yet it's not sugary indeed, thanks to the well balanced bitter aftertaste.

Pšeničné pivo 11 % bavorského typu vyznačující se silným řízem a plností, slabou a jemnou hořkostí a především typickou slabě banánovou a hřebíčkovou vůní a chutí. Vhodné především k zahnání žízně a únavy a k lehkým dezertům. Optimální teplota pro konzumaci je 10°- 12°C.

American smoked sour ale made with 100% Mesquite smoked barley malt from Copper Fox Distillery (VA). Medium/light bodied, intense mesquite wood smoke character with a sharp but clean sourness

Hazy golden wild farmhouse ale, dry hopped with Mosaic, El Dorado, and Jarrylo. Beautifully balanced acidity, glowing hop aromas redolent of guava, watermelon candy, pineapple, and ripe mango. Conditioned on oak for light tannin structure. Don’t age this beer; drink ASAP.

Dry Hopped Mix Culture Pale Ale.

Tasting notes: Aroma is of malt with traditional hops in the background. Flavor starts with a slightly toasty malt sweetness, followed by a mild fruitiness from the yeast (strawberry) then a firm, but not overwhelming or harsh hop flavor. The hop character of this beer is due primarily to early hopping giving it a full hop flavor without a strong hop aroma. The finish of this beer is slightly sweet, but leaves the palate clean. This session beer is full-flavored without being high alcohol or dominated by hops. The intent was to let all the ingredients of the beer come through in the flavor and produce a complex brew that is still easy to drink.
