Honey-colored beer with the average alcohol content of 4.2 vol.%, Is brewed from four types of specialty malts that give this lager unmistakable flavor and aroma.

The style is based on the early American attempt at reproducing the flavor of European Pilsners, brewed with a blend of lager and ale yeasts and fermented warm (like an ale), followed by a cold conditioning period. We use flaked local corn, as was common for the style, and the result is a pale gold, fairly sweet beer with low hop flavor and bitterness. It is crisp and refreshing and as American as baseball, and goes well with watching it too!

This is an almost one-dimensional hop monster that still sees Maris Otter put up a good fight in an attempt for malt balance. But it’s really all about the hops, both bittering hops and aroma hops. Familiar American hop character dominates at every level. Promised Land is a very difficult beer to pair with food, but it can be done (with assertive flavors). Despite its light color, please suggest it to be tasted last when possible as the hop compounds will obscure other beer flavors later in the same tasting session

Proper Job is an authentic IPA brewed with Cornish spring water and malt made from a blend of malts including Cornish grown Maris Otter barley.

Prophecy is our third ale to be aged in bourbon barrels. We’ve taken our Merry Monks’ Ale and carefully aged it in bourbon barrels. The result is a fabulous unique ale, softened with hints of vanilla and oak, with an intriguing finish to it. Prophecy is a limited release so when it’s here, be sure to grab a case or two to lay away before its gone. 9.3% ABV.

Barrel Aged/Sour Porter Propitiation was born from one of the six components of the Toronado 25th Anniversary beer. It was aged in used wine barrels for 12 months before being removed and carbonated. The beer is dry and light in body but full of rich chocolate and coffee notes with a mild sour/tart finish.

This radiantly dark mahogany porter showcases a beautiful tanned, cocoa-colored foamy head that assists in the silky and creamy mouthfeel. The aromas of roasted coffee and underlying hints of cocoa powder and black licorice compliment the flavors of bready, toasted malt, the bittersweet of dark chocolate, and a light ash smoke. A slight herbal citrus undertone and medium bitterness in the finish.
