Seven Hundred Thirty was created to commemorate our first 730 days. It is a complex blend of several different beers – some barrel aged. Notable among them is 365 – our first anniversary ale aged for a year in fresh bourbon barrels. We also sampled and selected from our stock of oak-aged Belgian-style beers and added those that would contribute additional depth and character to this bottle. The final blend is a mosaic representing our brewery’s past while pointing us towards our future. Stored properly, 730 should age well. Enjoy now or in the future.

This Abbey Style Dubbel Ale earns its appellation by being brewed with double the normal grain bill and the addition of Belgian dark candi sugar. Fermenting with Trappist yeast creates dark fruit esters. Pilsen, Pale, Extra Special and Chocolate malts evoke classic Belgian Ale sweet aromas with a hint of nuttiness. Use of Hallertau Hersbrucker and German Select hops enhance authenticity and provide a restrained bittering of 20 IBUs and a slight spicy aroma.

Named after the seven valleys that converge in Cortland, NY, this full-bodied stout is toasty with a touch of chocolate malt for sweetness. It pours pitch black with a thick frothy tan head and goes down easy, especially for a dark beer. Seven Valley Stout’s excellent black malt character makes it smooth, earthy, and delicious.

Our Seventh Star IPA is a ripe, fruity brew that features the elusive Idaho Experimental #7 hop. This new contender boasts bright notes of melon, grape and strawberry, which we offset against a light swirl of Azaca hops, allowing for just a splash of tropical fruit. Like the Seventh Sister of the Pleiades, this divine IPA straddles the gulf between heaven and earth to deliver a truly cosmic experience. Cheers!

Although fresh, characterful year-round and recurring seasonal ales generate Midnight Sun’s livelihood, the more eclectic beers create wildfire desire and sell-your-soul-to-the-devil demand from a further reaching and much geekier customer base. SEX machine Belgian Sour Brown Ale runs rampant in the latter category. Inspired by James Brown’s Sex Machine, our beer pays homage to the “do what moves you” spirit—in beer…and in life. SEX machine began as a batch of brown ale brewed in early 2011, which was transferred to oak barrels and introduced to lactobacillus, pediococcus and brettanomyces, aka The Funk. And The Funk danced its way all over this oak-barrel stage for almost two years before being blended with a fresh-faced batch of brown ale. The melding of old and young, sour and sweet, worldly and naive results in a beautiful beer blend that makes an amazing impression on your palate. We will be showcasing SEX machine on occasion up in our Loft…and at festivals and beer dinners throughout the year. Cheers!

A Double Chocolate Porter that’s sensually crafted with Colonial Rosewood Cocoa, chocolate malt and lots of love. The addition of White Wheat gives Sex Panther a smooth, creamy head.

A sweet nose greets the adventurous in this marriage of our Black Betty Russian Imperial Stout and American Brandy barrels. An elegantly pleasant surprise wakes the palate which migrates from a hint of brandy into a wonderfully lingering roasted malt character.

Crisp rye ale with a deep red color. Brewed with 25% malted rye, this beer is a slightly spicy, very drinkable brew. The Sexy Story: Sexy Rexy Red Rye is named in honor of Cheryl’s dad. Nicknamed Sexy Rexy, Cheryl’s dad introduced her to beer for the first time. He had a beer collection of hundreds of empty cans on custom shelves above the couch in his den – pretty classy! Rex was “old school” and loved him a red snapper. Before he died, Cheryl was in the process of converting him to craft beer. Sexy Rexy Red Rye is smooth and charming, and a bit spicy, just like Rex. This was brewed with the beach in mind, his favorite place!

New, small batch "Belgian Hybrid Ale". Brewed with small quantity of wheat and coriander, dry hopped with Citra.

Ours is a traditional German-style Wheat Beer. We use German wheat, German barley and German hops. It is gold in color and has a soft, smooth malt character. We also use a German yeast specifically cultivated for this style of beer. It imparts extremely interesting flavors of banana, clove and spice. It is unfiltered and, therefore, cloudy as is traditional.
