Klasse

Klasse (pronounced CLAWS-eh) is a Vienna lager brewed in the old tradition of using the highest quality Vienna malt, German hops, and a patient lager fermentation to develop a delicious amber lager with a hint of sweetness and unparalleled drinkability.

Torpah 30

Torpah is a range of three single-hop beers, each made from a unique and single type of hop (hence the name). The declinations of Torpah 30, Torpah 60, Torpah 90, refer directly to each’s IBU (bitterness index) We encourage you to taste them all to experience the progressive intensity of the bitterness and the taste we have achieved around each hop.

Wobblor

The Wobblor is a decidedly rich pale doppelbock, showcasing toffee, caramel and stonefruit flavors, melded with the complexity that can only come with a patient lager fermentation. Delightful out of the bottle on day one, or tuck away for months or years to come, this beer will only get better, smoother, and more complex with time. Enjoy with a friend, and make sure it’s a good one.

Batch 012: Chance of Rain

One of our favorite things to do is to play with new ingredients or techniques to make fun stuff to drink. With this little cloudy guy, some lupilin powder came across our merry little workshop. Naturally, we did what we do best, turned this fun thing into a delicious libation. Juicy, balanced, and smooth drinking for 8.5% abv, this beer is our riff on the New England style IPA that everyone is attempting right now, it doesn't look like a milkshake, and it doesn't come in a pint can, but its just as fucking delicious. Malts: Pale Malt Hops: Idaho7 Cascade Mosaic Simcoe Yeast: House Ale OG: 1.078 FG: 1.017 IBU: 60.9 SRM: 4 ABV: 8.5%

Blood Orange And Cranberry Berliner Weisse

Finally, a sessionable sour beer you can have with breakfast! We started with a Berliner Weiss base, made using traditional lactic fermentation and “raw” no boil methods. We then added a generous helping of blood orange puree and cranberry juice for added complexity. Tart, juicy, and approachable.

BrewDog vs Cloudwater New England IPA v2

We were so psyched to welcome Paul and the team from Cloudwater back to Ellon that when thoughts turned to the second batch of our collaboration, we decided to push the boat out. For this iteration we have ramped up the malt bill to give an ABV of 8.5% so that the body of the beer really comes through, and to give that pre-requisite balance we have added a third hop to the dry-hop schedule. Alongside Citra and Mosaic we deployed Mandarina Bavaria to give a pithy tangerine element to the aroma. The Vermont yeast and oats leave the beer with that trademark smooth mouthfeel as required by the style, and although the ABV has increased we have retained the bitterness at around 30 IBU to leave that baseline exactly where it should be. There are hints of spice in there too, and the Mosaic provides a slightly tropical edge (we used Mosaic in the whirlpool to carry this through to the final beer). But, above all, this beer is about the stone fruit flavours.

Extravagant Yard Cutter

This is our tribute to St. Arnold's Fancy Lawnmower Beer. We stayed true to the original recipe from the original SABC brewery, then added extra hops towards the end of the boil to make it more spicy and floral, but still true to the original. We even fermented it in the fourth fermenter that St. Arnold bought, Dorothy (now Count Crispi). This is a light, refreshing beer, perfect for a hot summer day after mowing the lawn, or cutting the yard.

Frucht: Blueberry

We’re totally Frucht around here. In fact, we may just be filled to the brim, with excitement, that is. Our threshold is 250 BBLs, to be more precise. That’s the total capacity of each oak foeder at Bruery Terreux. One is dedicated exclusively to Frucht, our series of fruited Berliner Weisse-style beers. Known for a tart flavor profile and traditionally low ABV, our German-style wheat beer gains even more funky notes and natural earthy-woodiness from its fermentation in the large oak foeder vessel. Each installment in the series features a new fruit, or Frucht, if we’re Sprechen sie Deutsch. This installment has blueberries added, which imparts a subtle juicy flavor, refreshing complexity and sheer opulence to the beer. Prost!

Ganache

The liquid equivalent of biting into a raspberry-filled dark chocolate cake. Aromas suggesting mixed berry and roasty cocoa meld with flavor notes of raspberry, cherry, and subtle coffee. Even without the addition of chocolate, Ganache gains its cocoa notes from a robust grain bill featuring Special B, caramel malt, raw wheat, oats, our 2-row base malt, Midnight wheat, and black malt. This dark burgundy-colored beer is fermented in stainless with both our house yeast and Brettanomyces claussenii before aging on fresh, local raspberries. No utensils necessary.

Goses Are Red

This is a rosé - and a gose - by any other name. Goses are Red is a stylish match of a funky, crisp and tart gose with the soft sweetness of a rosé wine. The refreshing wheat-based beer begins with some of the qualities you’d expect from a gose, including coriander spicing and a light saltiness to complement the tartness imparted by our house cultures. But the story doesn’t end there - it builds in complexity, thanks to time spent in an oak foeder and the addition of grapes, which impart a refreshing rosé character and color. It’s a charming interpretation that says all the right things, but it’s not as sweet as you.

Sunflower Pilsner

Sunflower Pilsner’s story doesn’t begin at our annual mountain retreat, where anyone on staff can pitch a Brewhouse Rarities beer concept. It actually begins at Catonsville High (go…Comets?), where our DC sales rep, Zach, first met his co-pitcher and our Baltimore sales rep, Carl. Reunited under the flag of Flying Dog, Zach and Carl brought their shared love for lazy summer days, Orioles baseball and reliving their glory days together in their Sunflower Pils. This 5.2% ABV Czech-style pilsner is brewed with pilsner malt and sunflower petals alongside the spicy and floral notes of Saaz hops.

2 a.m. Keith

2am Keith is an over the top red double IPA. The intense, dank, resinous piney aroma assaults your senses. This gives way to an intensely clean but bracing bitterness. Our Wheat hails from all that is Kansas. We use a prolonged mash schedule to make the most of what the wheat has to offer. Bamarillo

This beer is an Amarillo-hopped saison brewed with pineapple. Bamarillo uses the same grist bill as Bam Bière, but with half the amount of Crystal and Cascade hops. Amarillo hops were added in place for their rich, tropical fruit qualities. Bamarillo was aged in an oak foeder for three months, and in the final month of aging, pineapple puree was added to accentuate the hops fruity characteristics. Before packaging, Bamarillo was dry hopped with both Crystal and Amarillo hops. A fruity, dry, and drinkable ale. Bamarillo is there for you to make things happen.
