Holy Cowbell

The Bollywood of beers. We wanted to build a recipe which really pushed the love affair between dark malts and hops. So we designed the brew around allowing the hops to sing on top of a dark malt bomb. We aimed to brew an almost dark chocolate-like base beer and then piled on with the tropics of summit and centennial hops, lifting the waves of smooth chocolate off the tongue. We categorise Holy Cowbell as an India stout. ‘India’ coming from the same meaning behind ‘India’ pale ale. Basically lots and lots of hops added in their masses at the end of the boil and then in dry hop, to extract maximal hop flavour and aroma!

Chapter One is our honey farmhouse ale Resisting the Obvious barrel fermented in a freshly dumped red wine barrel with three carefully selected Brett strains and conditioned on local CT honey and dry-hopped with Loral and German Saaz. This beer is not acidic but has more commonality with a traditional French "saison". Think: musty, barnyard funk, and day-drinking after harvest season is finished.

The Roman Emperor Julian even composed a poem about the amazing qualities of wine while also stating that beer smelled like goat. To celebrate the Roman dislike towards beer, we blended a sour ale that was aged in fine Gaulish (French) wine barrels & on Chambourcin (also French) grape skins that is sure to have been better than the traditional Pasca that the legionnaires drank (a field drink made from sour wine, water, & a touch of vinegar)

Rooting Around is a seasonal beer series for 2017 embracing our local terroir. Brewed for each season with foraged ingredients available to us at the time. Tying together seasonality and foraging is something we can really get behind at the Wild Beer co. Rooting Around - Autumn, seeks to harness the flavour of Autumn with the use of a fig tree. Toasty, roasted and nutty malt flavours perfectly capture the darker nights and crisp chill in the air. Fig fruits work perfectly with this malty backbone however toasted fig leaves are the star ingredient here. They impart a lightly toasted coconut character which marries with the fig fruits and contrasts the tannic bite of the fig wood.
