Fresh Hop Mosaic IPA

To celebrate the harvest season in Iowa, we brewed a “harvest beer” made with whole-cone Mosaic hops harvested just 24 hours prior to brewing and shipped “wet” (not kiln-dried as usual) overnight from the Yakima Valley in Washington. We kept the malt bill simple to accentuate the hoppy goodness, choosing mostly 2-Row American barley malt with a little honey malt and carapils. Centennial and Nugget hops were added early in the boil for bittering. Most of the fresh Mosaic hops were saved for the whirlpool where they add a distinctive citrus and grapefruit flavor and aroma that are sure to make this brew a sensation, especially with the legions of IPA lovers. Brewed fresh to be enjoyed fresh, be sure to get some while it lasts.

Prodotta con aggiunta, in fermentazione, di ciliegie “Bella di Garbagna” (Presidio Slow Food); precedentemente ottenuta a partire dalla Demon Hunter, la scelta della Runa la abbassa di grado alcolico e rende maggiore giustizia all’aggiunta della ciliegia locale. Nel bicchiere evidenzia un bellissimo rosso corallo, molto originale; il naso è fortemente caratterizzato dalla Bella di Garbagna, che si esprime con note di ciliegia fresca, con ricordi di frutta di bosco, oltre ad un sottile floreale di geranio. In bocca è ricca, avvolgente, con dolcezza di frutta (ribes nero) e amaro di tannino; il finale è molto elegante, complesso, dove è evidentissima la ciliegia sciroppata (lunghissima nel retrolfattivo), accompagnata da una lieve nota sapida, minerale. Birra, elegante, complessa, ma che mantiene buona facilità di beva. Abbinamenti suggeriti: carni rosse, selvaggina, tagliatelle ai funghi.

In Bocca Al Lupo

Radici. Due icone si incontrano a Berlino per augurare in bocca al lupo alla craft beer revolution. Collaborateurs Teo Musso and Greg Koch share many things in common. Chief among them they began their rise to prominence in the late 1990’s with big, bold beers, and these gents are, shall we say, full of braggadocio, swagger and unrepentant joie de vivre. Also in common was the way in which, with aggressive intention, they each so cavalierly sabotaged norms that had been so irresponsibly led by the lowest common denominator purveyors of industrial beer. Thus, it’s only natural that having first met in Piozzo, Italy in 2000, the pair found themselves to be international comrades and lifelong friends in the craft beer revolution. This beer needs to be sufficiently scaled to the personalities brewing it. Therefore, it is unquestionably full of braggadocio, swagger and unrepentant joie de vivre. High in the Italian Alps, whence the gentian root [radice di genziana] was sourced, lie the lairs of Italian wolves (natch). Lupo and luppulo is Italian for wolf and hops, respectively. This is all the excuse that we needed.

Oatmeal Stout

This classic English style stout is a throwback to the mid 1800’s when oats were first added to this style in order to make them “nourishing” and were often prescribed to nursing mothers for that reason. English and Scottish breweries often made sweeter stouts than their Irish cousins and oatmeal stouts are a lot different from the classic dry Irish stouts like our Cobblestone. Oatmeal stouts are sweeter from the additional malts used (including caramel malt) and have a very silky texture from the small quantity of oats used in the mash. Our version is slightly drier than typical of this style but we make up for it by accentuating the apparent sweetness and smoothness of the beer by Nitrogen-charging it.
