Agnostic Fruit is a revolving fruited kettle sour in which the base beer is riffing on a slightly stronger than traditional Berliner Weissbier. We inoculate our wort with lactobacillus from an organic yogurt pitch which causes a primary fermentation of this bacterial culture where lactic acid occurs to our acceptable level before we stop the fermentation and finish off the brew. AF is fermented with a traditional Munich wheat ale yeast and shows esters of apple, pear, acid and light banana with a medium tartness that ends with a pleasant lactic zing.
Volume 5 in this revolving series is Pho-linner! Originally made 2 years ago using Hess My Vice Berlinner for their anniversary it finally reaches the taps with our AF series. We use Lime, serrano peppers, Thai basil, all-spice, cinnamon, star anise and sea-salt that all comes together to create a flavor explosion reminiscent of the delicious Vietnamese delicacy Pho soup. Thirst quenching with mild tartness this is a real culinary treat
