Monk's Fest

A red-gold Märzenbier as tradition dictates of March beers. Spicy in the trunk with a full-bodied as the antithesis of the palate circulating around hop aroma. The ceramic cap on this beer classic evokes memories of old, located in front of mechanization, revive times again. A traditional beer of the monastery Weissenohe. The name Märzen way, comes from ancient times when the beer was still cooled in the storage cellar with ice from the surrounding ponds. In March, then the last ice was often harvested from the ponds and placed in the storage cellar. The beer had accordingly with high original gravity, be due to the durability, brewed and thereby got the corresponding strong taste as befits a Märzen. The name then goes without saying!

Monkey Chased The Weasel

The backyard of our brewery has a mulberry tree that drops its fruit in the first days of summer. We moved into our building during early summer 2011, tracking a bright purple path through our new home with every laden step. It was then we decided: if mulberry was going to get that deep into the brewery, it probably should get into a beer as well. Stealing a process from Berliners, we let the lactics in a wheated mash sour up to a green apple/lemon level, accentuating thebright side of the mulberry profile. Meant for quaffing when there is no reason to avoid direct sunlight on balmy summer days, drink Monkey Chased The Weasel because there is more sun than moon at the top of summer.

Monkey Stones is a collaboration between Monkey Paw and brewer Jeremy Moynier from Stone Brewing Company. After some discussion, we decided to make a black lager, with a bit of Stone flair. This is a strong, 7.7%, black, toasty beer with attitude. Roast, toasted almonds, and a pine-filled hop aroma are first on the nose. As the beer warms up, you notice a lot of chocolate and orange, with a solid hop bite. The taste is similar, but smooth, hoppy, and delicious. This is not your typical black lager. Monkey’s Dunkel

This is a traditional Munchener Dunkel (Dark Munich) style bier, fashioned after the original lagers of Europe before the advent of pale biers. Dunkels still enjoy great popularity in Bavaria and for good reason. Their nutty and toasty maltiness is neither too sweet nor overly roasty, making for a beer that is satisfying and very drinkable. The use of Munich malt as a base gives this beer its dark brown color and unique malty aroma and flavor. German hops give this beer a subtle earthy undertone with a clean finish. Monkey’s Dunkel is a signature series of Cory Buenning, whose love for traditional styled lagers is very apparent in this brew. The alcohol content is 4.6% . Monkey’s Uncle

Monkey’s Uncle is COTU’s take on a classic beer style from Belgium – the Tripel. Pilsner malt is the primary building block, providing a light crisp body and straw color. Small amounts of German Munich and Vienna malts add further color and sweetness. Belgian Candi Sugar and fresh lemongrass, added during the boil, contributes more fermentables and aromtaics, while at the same time lightening the body further. Lightly hopped, this beer was fermented with a yeast strain originating from one of Belgium’s celebrated breweries.
