Shticky Blonde

Derek started working on this particular recipe about 4 years ago. It started as a lager style, but switched to a Kolsch Ale style about 2 years ago. The finished product has not changed much over the years. Golden color, light carbonation, malty tones, without much hoppiness. Currently runs around 6% ABV. There is a presence of honey, but ever so slightly. The finish is very nice, soft, and light. Every sip begs for another.

Shunaulo Wheat

Pronounced "Soon-alo" this Nepalese word means "Golden." This cloudy golden beer is based on a Bavarian hefeweizen (unfiltered wheat beer). Slight hints of clove and obvious banana esters are present in this beer but not due to any flavor additions. The special strain of yeast we use produces these compounds for a fruity & spicy and quite refreshing experience. 50% of the grain bill uses malted red wheat and it is brewed according to the Reinheitsgebot (German Purity law of 1516).

Siam – Thai Saison

The Jolly Tar name is inspired by one of the famous rye whiskeys produced by the Altschul Distilling Co. founded in 1862 by Samuel Altschul Sr., an immigrant from Germany. The distillery was located in Springfield, O and featured more than a dozen brands, including Jolly Tar Rye. His flagship label was Old School Rye which was derived from the English translation of his last name Altschul. He styled this whiskey “pure and potent.” Jolly Tar is dark brown with ruddy highlights and has a subdued hop character with a mildly assertive finish. The aroma is malty with lots of baker’s chocolate and mild raisin-like notes. The aroma flows into the flavor of the beer with chocolate, raisin and fig like character. The mid palate is malty with medium body that finishes somewhat dry.

Back in 2012 we wanted to launch a new range of beers with a bang, and what better way than to invite the renowned tour-de-force beer-writer that is Melissa Cole to come and brew with us. Our aim was to put our own Yorkshire stamp on the Saison category, and we did so with the addition of local Rhubarb. Siberia is now our most successfully exported beer. Here we utilized the sour nature of rhubarb to balance the farmhouse earthiness of Saison yeast. We stewed the rhubarb with vanilla to provide extra balance, so that this beer is tart in all the right places, and subtle throughout. Refreshing and with a little zing provided by ground Grains of Paradise and there is a long, satisfying bitter finish.

Sidra Guzmán Riestra Brut Nature, made from our cider base obtained by a careful selection of the best cider apples using the traditional method of second fermentation in the bottle. After a conscientious and meticulous selection from clasicc traditional ciders in our bodega second fermentation in the bottle is initiated by the addition of cider yeast. The bottles are then positioned for riddling (precipitation of sediment) for a minimum of 5 months yielding a minimum pressure of 6 atmospheres. At this point the lees are removed by traditional disgorgement.

Sidra De Nava

Sidra de Nava is a tart, lemony summer Spanish-style sidra. The Asturias region produces 80% of the Sidra in Spain, and the Asturian summer is something to behold. The skies are clear and blue, the cafés full, and Sidra reigns supreme. Every café and Sidrería pours it – either ’thrown’ from a bottle or pipa (pitcher) held high overhead or straight from the kupela (barrel). Afternoon drinking under those blue skies leads to long nights of music, dancing and of course, more Sidra. The climax of the summer is the Festival de la Sidra in the village of Nava, held each July. Virtue’s Sidra de Nava is more tart than the dry ciders of England or funky cidre from France. It’s lemony nose and bracingly tart dry finish are a happy intersection of cider, dry white wine and fresh squeezed lemonade. It’s the most refreshing of drinks, pure sunshine in a glass.
