Furthermore, Truckee has no Trappist Monastery and that, my friend, is why we at FiftyFifty bring you Trifecta. This is one of FiftyFifty's seasonal ales, and is a high alcohol Belgian style beer. Brewed with inspiration from Belgian Trappist Ales, Trifecta also includes locally grown Purple Sage Honey. With a complex spiciness tempered by the sweeter notes from the sage honey, flavors of spicy sage, alcohol, and mild malt sweetness are apparent, and sage and clove like aromas predominate. Coming in at over 8%, this beer is deceptively strong.

Trillium

The simplicity of Trillium’s grist of barley and wheat delivers a wonderfully complex yet still approachable beer. The house blend of farmhouse yeasts and Columbus and US Goldings hops drive a distinctive character in this rustic, unfiltered ale. A beautiful nose of spice and pepper, coupled with flavors of fermentation-derived fruit and more pepper. Firm bitterness, nicely carbonated with a dry finish, but there’s also a wonderful smoothness in the mouthfeel from the wheat.

Trinity VMS

The milk stout was very popular in the United States prior to World War II. It uses lactose sugar to add a smooth, mellow sweetness to the beer. Our milk stout was crafted using brown, chocolate, and coffee specialty malts to create a subtle nutty, chocolate sense with a coffee undertone. A hint of pure vanilla is added late in the fermentation stage to tease the senses and round out a touch of vanilla sweetness. This dark brown stout has already found a great following even amount the less experienced craft drinker and is often described as a desert beer.

Trip In The Woods Barrel Aged Narwhal w/Red & Black Currents

Barrel-Aged Narwhal is our deliciously dark Imperial Stout aged in Kentucky bourbon barrels. Barrel aging is a strange science; it mellows some characteristics of the original beer while intensifying others. Narwhal’s aggressive roastiness has calmed, but the rich, chocolate-like malt backbone is brought to the fore. Black as midnight, this intense stout is complex with notes of cocoa and espresso balanced with hints of vanilla and toasted coconut from the oak casks. Nearly as rare as it’s nautical namesake, try Barrel-Aged Narwhal while you can because like the creature itself, it will soon dive into the depths and leave nary a trace behind. Inspired by Finnish Sahti, a traditional Rye Ale brewed with juniper. Trip IV is a hazy amber ale with a sturdy mouthfeel and a crisp, lively "Finnish". Trip XX

This was a fun beer to brew, partly because there were a lot of people on hand, including Peter and Dick, who collaborated on this last Trip idea, and Chris Murakami, who did most of the work. We began with a simple enough malt bill of pale and C-77 crystal, bumped the gravity and lightened the body with some sugar, adding Magnum hops to bitter and Styrian Goldings to finish, with some French Strisselspalt for dry hopping. Then the x-factor, brettanomyces, was added in the bright tank immediately before kegging, and the kegs were warm conditioned for more than a month.

As if DRIPA wasn’t enough, we first brewed this Triple Rice IPA for our 2013 Summer Solstice Celebration. The larger grain bill and longer boil leads to a big malty character, yet the hops are still at the forefront, all sticky and citrusy. The finish lingers a bit longer than DRIPA, but is still clean and dry with just a bit of heat.
