Schlafly Tripel has patiently awaited joining the ranks of our bottle-conditioned Belgian-style ale series. It was the first festival ale for our HOP in the City beer festival, which makes it dear to us. Tripel is hearty with a golden hue and rich, fruity character. While this ale is light in color, it is fuller bodied than many darker ales. These characteristics make it a great after-dinner drink and a perfect complement to aged cheese and fruity desserts. We age this ale for months before it touches a bottle but, if you have the will power, it will improve for years to come.

Our house Belgian yeast provides the estery and mildly phenolic flavor of this well attenuated (83%) beer which is balanced by a solid malt background and smooth hop bitterness and flavor.

Another Belgian classic. Pilsner malt and German specialty malts provide the malt backbone for this beer. Invert sugar is used to boost the strength, as well as thin the body and dry out the beer. It is a sipping beer with deceiving strength, as the alcohol content should be well hidden. As with many Belgian beers, the yeast plays a crucial part supplying the spicy/fruity character. Glacier hops and Grains of Paradise supply an additional pepperiness.

A very pale/light-colored Belgian Abbey ale finishing lightly sweet with medium body and nice malt/hop balance, mainly characterized by a complex yet mild spicy character with yeast-generated fruity banana, pineapple and tropical fruit esters being present.

A slightly hazy golden colored brew. We used a combination of noble hops to bring in earthy and light citric hop notes. Belgian yeast notes, light spicy flavors, soft lightly sweet malts and a crisp dry finish. This is a favorite recipe and one that we’ve enjoyed cellared for up to two years.

An Abbey-style Tripel ale. This light colored traditional tripel is made with Pils malt and candisugar and fermented with a traditional yeast strain. Esterey and strong best describe this unique specialty beer.

Cellar aged, subtly complex and deceptively strong. Using two of the old world's brewing traditions, we have combined British ingredients and methods with Belgian ale qualities.

Tripel Deke features intense fruit notes from belgian yeast esters, mild spice character from European hops and sweet flavors of dark candi sugar. At 8.5% abv, our Belgian-style Tripel is deceptively smooth and warms just the right amount.

This is a Belgian style Dubbel brewed to the higher alchohol volume of a Tripel. This ultra smooth beer is brewed with lots of dark malts and has a light hoppy finish with fruity notes from the Belgian yeast used in producing this beer.
