Dogwood IPA

Dogwood is an aggressively hopped IPA using magnum, CTZ, and Citra hops. It is darker than most IPAs due to touch of caramunich and darker crystal malts we have chosen and believe give this beer a balance that is extremely unique.

Dom'e'stique Wit

Our American version of a Belgian Wheat Ale. Traditionally unfiltered, but in this case, unusually clear. Along with the Wheat Malts and Organic Oats, you'll find Hints (yes… Hints, not bombastic amounts) of Coriander, Lavender, and Bitter Orange peel, which gives it a slight Lemony Touch. We use aged hops, so there is very low levels of hops in both taste and aroma. Our Wit beer helps to sooth that summer heat away, just like a domestique (helper) that brings water and supplies from the support cars up through the peleton to the front end riders for relief.

Donkere Vader

Donkere Vader in Dutch means "Dark Father", this beer was created by a collaboration with the Canadian-born Dutch friend Derek Walsh. Derek is a judge of international beers, has great knowledge and a very analytical approach; We know each other for several years and the name of the beer is in a sense a reference to him, my "dark father". Several years ago I proposed to make a beer together, our common goal was to be brewed a Black IPA that was not dominated by the toast of malti (as unfortunately often felt in most of the examples on the market) to allow the hops to unleash all their freshness in freedom. Proudly brassata with an implied attraction to the dark side of hops.

Doppelbock Dunkel

This world famous bock from Bavaria’s Holy Mountain is not meant to be rushed, but savoured slowly. As solid as a rock, Andechser Doppelbock Dunkel presides over the evening meal with a colour reminiscent of dark copper with nuances of fiery red. Its clear gleaming look harmonises with its firm, fine pored head. Also the aroma delights the connoisseur: soft roasted accents and a nuance of dried fruit carrying a vein of caramel. This Doppelbock Dunkel from Bavaria’s Holy Mountain presents a pleasant effervescence. And then there’s the unmistakable flavour: mouthcoating and velvety, strong and yet pleasantly malty – a powerful, robust body. At the same time, it develops an easily recognisable sweetness, embraced in roasted cocoa and a light, bitter hoppiness. Concluding with a powerful punch, this Doppelbock departs with a lingering aftertaste of quality plain chocolate. Dorothy Goodbody’s Country Ale

The fields of barley ripening in the sunshine, the hops climbing up the bines in late summer… it was sights like these that inspired Dorothy to create her Country Ale. Thumbing through her grandfather’s books, Dorothy came upon a recipe for a wonderful stout with intense roasted barley flavours and a dry, bitter finish. Doryman's Dark Ale

Our American Brown Ale has a dark brown color, with a balanced aroma of roasted malts and Northwest-grown hops. The sweetness of the ale and crystal malts blend beautifully with the assertive flavors of Cascade and Mt. Hood hops. A brew to be savored. This beer originated as a prize-winning homebrew many years ago. When Darron, the Head Brewer, began designing the beers for the Pelican Pub and Brewery, he adapted his old 5 gallon homebrew recipe to his new 15 bbl (465 gallon) brewery. It was well worth the effort, for not only has the Doryman's Dark Ale been a perennial favorite here at the Pelican Pub, but it has garnered prestigious professional awards.

Dos Perros

Many Mexican beer styles today are descendants of old Austrian styles, from when Austria ruled Mexico in the late 19th century. Our Dos Perros is made with German Munich malt, English Pale malt, and Chocolate malt, and hopped with Perle and Saaz hops. To lighten the body, as many Mexican brewers do, we add a small portion of flaked maize. The result is a wonderfully bready malt aroma, balanced with some maize sweetness and a noble hop finish.

Dot Ale 1630

Dot Ale 1630 is an amber colored, medium bodied Pale Ale with a sweet character, subtle toasty overtones and a berry-nut flavor after taste. "DOT" is the endearing name given to the neighborhood of Dorchester, Massachusetts. The name is representative of the blue collar attitude that saturates the neighborhood. Our attitude is rigid with a strong aroma of pride. Dot Ale was designed to illustrate this town attitude and allow wannabe's to ultimately be a part of Boston. It is an excellent compliment to a corn beef sandwich, local seafood or simply watching a Red Sox game with friends. "Come get yah Boston accent!"

Double Brown Stout

'Stout' for many years meant a Porter of substantial strength and at several times and places in history the term 'Double Brown Stout' has signified a variety dark, strong brews. Our favorite is the Scandinavian or Baltic version, emphasizing the chocolate-y and dark dried fruit character over the burnt or ashy roast flavors of some its cousins. Unlike most members of the Stout and Porter family, our DBS is fermented with a lager yeast (rather than ale), whose cleaner fermentation profile allows the malt and hop flavors do the talking.

Double Bubble

Originally our summer seasonal, demand has forced us to offer the Double Bubble all year long, and we don’t mind one bit. This hop-whopper is the bigger brother to our very popular Bubblejack India Pale Ale. Light in color, the hops do the talking in this full-bodied ale. For this version, we’ve doubled the hops, and added three pounds of local honey per keg. Extremely smooth and slightly sweeter than the original, a little bit goes a long way.

Double Dark Cream Porter

The best reason you’ll ever find to “not be afraid of the dark”! CB’s Double Dark Cream Porter is everything the name conjures up in your mind. Very unique as it is a “cream” style Porter which, through the use of just the right ingredients and processes, we have created a beer with a very creamy, almost silky texture. This beer is still black to the point of being opaque, with a full, rich body and pleasant smokiness from the load of roasted malt in the grain bill. The hops take a backseat in this beer, but they offer enough bitterness to offset the malt sweetness. Try one and any misconception about dark beers being heavy or harsh will fade away quicker than the beer in your glass.
