Green Man IPA

A legendary India Pale Ale, the Green Man IPA is very hoppy with a properly balanced malt body. Brewed with generous hop additions in our kettle to give it a wonderful bitterness, it’s then late-kettle hopped to create a pleasant, floral nose. The “maltiness” is derived from traditional British malt. Its rich flavor stands up to the hops that would otherwise dominate this beer. Green Man IPA is truly an authentic version of an Indian Pale Ale, with a twist that makes it uniquely our own.

Green Trail

Don’t let the “easy-drinking” part of it’s name mislead you. Green Trail still delivers a mighty hop punch, but also has a smooth malt body that masterfully balances that famous Ithaca Beer hop intensity. Green Trail has “instant hit” potential with die-hard hop heads and new craft drinkers alike. Weighing in at 6.0% ABV, Green Trail neither overwhelms taste buds nor underwhelm palates as sessionable and approachable IPAs often can. Ithaca Beer’s lead brewer, Bill Ballweber put it best, “Green Trail is just a perfect everyday, go-to, instant-crowd-pleaser IPA.” “What is Green Trail?” one might ask. For founder, Dan Mitchell, Green Trail is a mindset. “It’s about blazing a path that sets you apart from the norm, or that way of thinking out of the ordinary. It’s on that green trail, you often, grow, discover, experience and hopefully improve your surroundings just a little bit…we’re on the Green Trail around here (at Ithaca Beer), are you?”

Greenhouse IPA

We’ve created a base grain bill for our IPA. The goal was to deliver a beer with a light copper hue and a hefty, lasting foam head and just a hint of malt flavor to balance out the generous hopping. The beer is currently 7.6% ABV and always it will be so. The color will remain the same since the malt bill won’t be changing. But, every month we’ll be releasing this IPA to you with a very noticeable change in aroma and flavor. And this is strictly due to the fact that we’ll be utilizing different hop varieties for each release of our Greenhouse IPA. 1 release per month, 300 cases per release, 12 releases per year, 12 different smelling IPA’s, 12 different tasting IPA’s.

Greenville Pale Ale

Greenville Pale Ale is a traditional American-style Pale Ale, rooted in the Pacific Northwest brewing heritage. We use whole flower Cascade hops and American two-row barley malt to produce a light amber ale that is medium bodied with a significant floral-citrus hop essence and aroma that make it extremely drinkable and refreshing. One of our brewersr, Jack Wick, said “You should name a beer after the town it’s brewed in.” So we did. The name Greenville Pale Ale represents both our local roots in Greenville, Delaware and our interest in “green” technology for the future.

Groundswell Blonde Ale

This is our take on the classic American Blonde Ale. Brewed with combination of pale and caramelized malts, this beer finishes light and refreshing, yet is full in flavor. Groundswell Double IPA

Our Double IPA is our biggest West Coast IPA and it is huge on flavor and aroma with an increase in alcohol content, coming in at 8.3%. A substantial increase in grain balances out the added bitterness due to the increased hop content. This beer is generously dry hopped, adding over one pound of hops per barrel incuding Galaxy hops to give the beer a tropical and citrus fruit aroma and flavor. A deceivingly drinkable beer, despite its higher alcohol and hop content.

Groundswell Ginger Saison

This light colored, full bodied Belgian Ale is the best of both traditional and modern brewing techniques. A base recipe that is true to the Belgian farmhouse Saison style, with a Southern California flare. Notes of bread and biscuit combine with the Belgian yeast which imparts a slightly fruity, tartness. We took it to the next level by adding fresh Ginger Root sourced locally. The ginger kicks in a spicy aroma and flavor and compliments the aromatics of the Belgian yeast nicely. This is an easy drinking beer that can sneak up on you at 6.8%.

Groundswell Hefeweizen

This beer is brewed to the true Bavarian Hefeweizen style. We use over 50% Wheat malt to achieve a full bodied, crisp, light wheat beer. Low in bitterness and hop aroma, this allows the banana and clove character provided by the traditional Hefeweizen yeast to come through nicely. The amount of wheat used also provides a sweet taste and hazy appearance to the finished product. This is an easy drinking year round favorite. Our resident German-born patron can be found slinging these back in our tasting room regularly!

Groundswell IPA

This West Coast IPA is both light and refreshing and huge on flavor and aroma. Coming in at 6.8%, we rounded the body with Caramel and Munich malts to balance out the bitterness from our boiling hops. Once fermentation is complete we blast it with a generous amount of Columbus, Centennial, and Citra hops (in the dry hop) to give it a combination of citrus and piney aroma and flavor upon first smell and taste. A very drinkable beer brewed to the West Coast Style of IPA.

Groundswell Piloncillo Brown Ale

This is our take on the American Brown Ale style, with a twist. This balanced Brown ale utilizes unrefined Mexican Piloncillo Sugar in the boil to add to the aroma, flavor, and body of the finished product. This is a full bodied, malt forward beer with strong notes of Caramel, Brown Sugar, Molasses, Chocolate, and Toffee. Traditional English hops like East Kent Golding are used to add just enough bitterness to balance out the malt sweetness. Hop Heads need not apply.

This is one of our first seasonal offerings for Summer time (May-September). A hybrid of the White Ale and West Coast IPA made to be a refreshing easy drinking beverage for summer. We brewed this IPA with Wheat to give it a pale white color along with a slightly sweet flavor and body. At the end of the day this is a hop forward beer, dry hopped with a combination of Citra and Wakatu hops that give a burst of lime, grapefruit, pineapple, and other citrus fruits in the aroma and flavor. A light, full flavored, bitter, unfiltered offering perfect for summer time, get it while it lasts!
